USDA approves soy as meat substitute in schools

The government's aim is to reduce children's intake of fat and saturated fat to less than 30% of calories. As of April 10, schools will no longer be required to fortify soy with iron and zinc. The USDA's new ruling replaces a previous guideline that limited soy as a food additive on school menus. The change will affect 26 million children who qualify for the $6 billion federally subsidized school lunch program.
